1 REFERENCE SECTIONS

To be read in conjunction with the Schedule of Finishes.

3 DESCRIPTION OF WORKS

OUTLINE DESCRIPTION: Supply and fit scheduled equipment in the location identified on the architectural drawings. Supply and fit only those equipment items shown on the Executive’s Chef’s Schedule. Generally all refrigerated equipment is mounted on a plinth. Provide all services, switches, indicator lights, thermostats, drains and tundishes to all equipment as appropriate and in accordance with Council Health Dept standards. Where drains are required ensure that adequate falls are built into the bottom of units and that drain taps are accessible and useable. Generally all work is to be seamless welded and polished. Submit samples and or produce prototypes of the specified unit at the time of tender.

  1. finishes

Generally stainless steel work for work surfaces, canopy facings and specialist equipment will be brushed stainless steel. Refer schedule of finishes.

10 Refrigerated display cabinets

REFER SCHEDULES ON THE ARCHITECTURAL DRAWINGS;

Supply and fit Gelostandard brand refrigerated display cabinets to profile shown on the drawings, finished in brushed stainless steel with modified lower front section to conform with counterfront finishes as detailed. Top servery finished in granite to match adjoining counters. Work surface at back of unit, in brushed stainless steel. All internal finishes in stainless steel. Provide thermostats, indicators, drains and services to the unit so as to conform with Cairns City Council Health Dept regulations.

Provide gaps both sides of the unit as shown on the drawings ( 100mm approx). Sides of unit (where not glazed)as well as horizontal surface of lower bench and return sides of bench to be matching granite.

Design each unit to provide the appropriate temperature setting as required by the Council Health Dept and the Executive Chef.

Refrigerant condenser equipment will be remote in a location as indicated by the operations manager Steve Murray.

 

  1. wine display fridge at back of bar
  2. Top of unit to be matching granite similar to bar high top( refer schedule of finishes). Remainder of unit is brushed stainless steel. Provide 100 x 100 x 6mm stainless steel wire mesh panels to form wine racks inside the unit, so as to support a wine bottle back and front .

    Provide lockable double glazed viewing doors as shown on the drawings.

    Refrigerant condenser equipment will be remote in a location as indicated by the operations manager Steve Murray.

     

  3. other fridges
  4. Generally, under benches fridges are on tiled plinths. 1: 50 Plan drawings are intended to show under bench fridges in modules of 750mm with corresponding door set out.

    Doors are double glazed and lockable.

    Finish will be brushed stainless steel.

    Refrigerant condenser equipment will be remote in a location as indicated by the operations manager Steve Murray.

    For back of counter areas below bench, where no fridges are shown provide stainless steel sheeted doors on cupboards to match refrigerator door finish.

     

  5. canopies
  6. All canopies to be self cleansing and internally lit. No exposed rivets. All welds to be polished or seamless construction. Construction generally to comply with Council Health Dept regulations.

    Refer mechanical drawings for further requirements regarding air flow rates, motor speeds and other service requirements.

    Dimensions shown on the drawings are indicative and are in context with the plans and equipment. Ensure that the set out of canopies complies with Council requirements.

    The back of the unit forms the front of a newly created duct. Frame the back wall with 100 x 50 studs, sheet with 9mm MDF. Paint the area behind the sandblasted glass with white paint.

    Fix the decorative steel sheet on both sides directly against the MDF, recess the wall lights into the depth of the studs. Return the decorative steel sheet ( on 30mm MDF) to form sides of the glass display boxes. Sandblasted glass on the inside back face.

    Decorative Stainless Steel sheet ;Rimex, Cambridge BA .

    Fix Polka shelving system to front face of decorative stainless steel. Finish corners of decorative ss sheet with clear anodised aluminium angle and matching panel rivets 15mm dia from ramset. Provide samples prior to fixing.

    Form 30mm MDF shelves at 500 intervals vertically. ( Scale off the drawings for heights). Clad with decorative timber veneer both sides with matching timber edge strip on the front.

    Decorative timber veneer: NAVLAM Pacific Cedar

    Recess the slimlight ( or dichroic, refer lighting schedule) into the front edge of the shelves. Support the shelves at the return sides ( with concealed supports) and on the intermediate glass dividers.

    Attach the glass dividers and glass doors with cast aluminium connectors including hinges. Allow for lockable doors to 2 rows of the display boxes.

    Depth of glass display units and cupboard unit below ; 300mm. Refer section CB on C13

    Clad sides of duct with decorative stainless steel.

  11. heat lamp above bistro 1 servery
  12. Fabricate the suspended heat lamp to the profile shown with solid stainless steel profiled ends. Use decorative stainless steel for all exposed surfaces; RIMEX 9EH BA.

    Provide continuous 500 watt heat lamps on dimmers.

  13. high top below heat lamp - bistro 1 servery
  14. Fabricate the high top to the profile shown with a profiled ply substrate. FINISH: RIMEX 9EH BA.

    Support the high top on 10mm solid, brushed stainless steel fins to profile shown on the drawings (4off in total). Face fix the fins onto the decorative stainless steel backing with matching cleat lugs welded to the back of the fin so as to create 4 fixing points per fin. At each fixing point bolt through the backing panel with 30mm cast studs (to match the Sandwich Bar studs) Sheridised Patina finish.

    Joins in the decorative stainless steel sheet to occur behind fins.

     

  15. ice wells

Generally as detailed on CSEC- 06. Divide the Ice Well into 2 compartments. The smaller compartment is 200 deep x the full width to contain drinks ice and drain into the larger ice well. Provide falls, drains and taps accordingly. Provide a perforated barrier between the two ice types.

Provide a wet lip 5mm deep x min 50mm beyond the ice well.

Provide a 10mm green slump acrylic upstand supported on a Polka system, to 3 sides of the ice well and located outside the wet lip.
